Pectic Enzyme breaks down pectin in fruit to improve crushing and pressing, while reducing pectin haze in wine for a brilliant, clear finish when fermentation is proper. It can also be added to red grape must to aid tannin extraction from skins. Do not add this enzyme with bentonite, as it will negate the effect. 1 oz package.
